Traditional Creamy Greek Soup
A traditional white creamy Greek soup with a lemon taste. Serve with bread. Bread bits can be dipped into the soup. It's low fat and tastes great! Want more chicken taste? Try adding a couple shredded chicken breasts. WOW!

Combine the milk and cornstarch. Beat in the egg yolks. Set aside.

In a large saucepan, bring the stock to boil. Stir in rice. Cook about 25 minutes until the rice is tender.

Remove the soup from heat, add the milk and egg mixture, stirring carefully. Continue to cook for a moment until all thickens.

Remove from the heat again and add the margarine, parsley, and lemon juice. Add lemon zest if desired.
