Homemade Black Bean Soup Recipes

This homemade beef and black bean chili recipe makes a hearty soup that hits the spot! Using frozen veggies helps to eliminate time consuming vegetable chopping.

INGREDIENTS:

  • 1 (15 oz.) can drained white beans
  • 1 (15 oz.) can drained black beans
  • 2 TBS olive or vegetable oil
  • 1 lb. ground beef
  • 2 cups your choice frozen vegetables. (I prefer a mixture of peppers, onions, carrots, snow peas, and a little celery. Use 2 cups of frozen stir fry in a pinch)
  • 2 (28 oz.) cans of diced stewed tomatoes
  • 2 c. water
  • 3 minced garlic cloves
  • 2 TBS ground cumin
  • 2 TBS chili powder
  • 2 tsp dried oregano
  • 1 tsp cayenne pepper
  • 2 tsp salt


    DIRECTIONS:
  • In a medium saucepan, heat oil over med- high heat. Brown meat until no longer pink and edges start to crisp.
  • Add the frozen vegetables and cook until tender. Toss in the garlic and spices.
  • Stir in the tomatoes and water and bring to a boil. Cover, reduce heat and simmer for 30 minutes to combine flavors.
  • Add the beans and cook for another 10 minutes.
  • Season to taste.
  • Ladle into bowls and serve. Garish with sour cream, salsa, jalapenos, or shredded cheese if desired. Enjoy this homemade beef and bean chili recipe.
