Beef and Black Bean Soup
Homemade Black Bean Soup Recipes

INGREDIENTS:

  • 1 lb. ground beef , browned and drained
  • 2 (14.5 oz.) cans chicken stock
  • 1 (14.5 oz.) undrained can diced stewed tomatoes
  • 1 bunch sliced green onions
  • 3 diced carrots
  • 2 chopped celery ribs
  • 2 minced cloves of garlic
  • 1 TBS sugar
  • 1 1/2 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 2 (15 oz) cans black beans, rinsed and drained
  • 1 1/2 cups cooked rice
DIRECTIONS:
  • In a crock pot, combine all ingredients except the beans and the rice.
  • On high, cook for about an hour. Then, reduce heat to low and simmer for another 4 to 5 hours until the vegetables are tender.
  • Add the rice and the beans and cook for another hour, stirring occaionally.
  • Ladle into bowls and serve. Garnish with a dollup of sour cream, salsa, or shredded cheese if desired. Enjoy this homemade beef and black bean soup recipe.
