Homemade Biersuppe
Beer Soup Recipe
This German homemade beer soup recipe is definately a unique soup to those of us in the USA, but a German favorite. It uses beer for the broth and is accented by cinnamon and sugar. Goes great with french bread or hard rolls. Enjoy your biersuppe!
Ingredients:
- 5 tsp flour
- 1/4 cup butter or margarine
- 2 pints of beer
- 1/4 tsp cinnamon
- sugar to taste
- 2 Egg yolks
- 5 oz. milk
- toasted white (French) bread
Directions:

Pour beer into a large saucepan, cover with lid cracked and allow to sit at room temperature for atleast two hours. You want the beer to be flat.

In separate saucepan, melt butter and stir in flour forming a roux. Allow flour to brown slightly. Add this mixture to the beer.

Add the cinnamon and sugar and bring to a boil. Remove from heat.

Whisk together the egg yolk and milk. Stir into the hot beer mixture. Mixture should thicken some. Ladle into bowls and serve with slices of toasted bread.
