Homemade Czech Soup
Boruvkova Polevka Studena - Chilled Czech Blueberry Soup


This homemade chilled Czech blueberry soup recipe makes a delicious refreshing soup. Boruvkova polevka studena is a great first course for picnics and grilling out. Served cold. Makes 4-6 servings.

Ingredients:

  • 3 cups blueberries
  • 4 cups water
  • pinch salt
  • 1 TBS sugar
  • 1 1/2 cups sour cream
  • 3 TBS flour
  • 1/8 tsp cinnamon

Directions:

  1. In a saucepan, add water and 2 cups of blueberries. Bring to a boil. Add the cinnamon, sugar and salt. Stir and remove from heat.
  2. Whisk together the flour and the sour cream. Then add the mixture to the hot liquid and stir.
  3. When well blended, return the pot to the heat and bring to a boil. Reduce heat and stir until broth thickens.
  4. Remove from heat, stir in another 1/2 cup of blueberries, and chill in refrigerator.
  5. Before serving, stir in the remaining 1/2 cup of blueberries and ladle into bowls. Enjoy this refreshing homemade blueberry soup recipe!
