Creamy Butternut Soup Recipe
Homemade Squash Soup

This soup is a creamy delight! Substitute Acorn squash if you prefer. Tastes great! Simple to make and low-fat too! It goes great with garlic bread. A tasty treat!


Ingredients:

  • 1 tsp vegetable oil
  • 2 chopped green onions
  • 1 two-pound peeled and diced butternut squash
  • 1 cup water
  • 1/2 tsp dried thyme
  • 2 tsp flour
  • 2 1/2 cups water
  • 2 tsp chicken bouillon granules
  • 1/2 cup skim milk


    Directions:
  1. In a large saucepan, heat vegetable oil over med-high heat. Add green onions and saute 2 min.
  2. Next, stir in squash, 1 cup of the water, and thyme. Cover and cook over med heat 10-15 min until squash is tender.
  3. Stir in flour and heat for about one minute. Then add remaining water and bouillon granules. Bring to a boil.
  4. Reduce heat and simmer, uncovered, about 10 min. Then, remove from heat and cool slightly. Stir in milk.
  5. Puree soup in a food processor or blender, until smooth.
  6. Ladle into bowls and serve warm. Garnish each bowl with a sprinkle of nutmeg and dollop with sour cream. Enjoy this homemade creamy butternut soup recipe.
