Homemade Sauerkraut Soup Recipe
Hapankaalikeitto: Finnish Sauerkraut Soup

This homemade sauerkraut soup recipe is sure to please those sauerkraut lovers. A meaty, flavorful delight!

Ingredients:

  • 1 lb trimmed, cubed beef
  • 1 hamhock (or chunks of smoked ham)
  • 3 c. sauerkraut
  • 6 c. homemade beef stock
  • 2 bay leaves
  • 10 whole allspice
  • salt and pepper
    Garnish with dollops of sour cream

Directions:

  1. Place the cubed beef and hamhock in a large pot with the sauerkraut, stock, and allspice.
  2. Bring to a boil, lower the heat, cover, and simmer for 2 1/2 hours.
  3. Season with salt and pepper to taste. Remove allspice berries and bay leaves.
  4. When ready to serve, ladle into big bowls, top each with a dollop of sour cream. Enjoy this Finnish favorite!
