Palak Ka Shorba - Indian Spinach Soup Recipe

This homemade Indian spinach soup recipe is a delicious creamed soup. Mixed with cumin, turnip and onion, it is a delicious, healthy soup! Garnish with a sprinkle of chili powder if desired. Enjoy. Serves 4-6

INGREDIENTS:

  • 1 TBS olive oil
  • 1/4 tsp cumin seeds
  • 1 diced red onion
  • 1 1/2 tsp grated ginger root
  • 1 med. chopped and peeled turnip
  • 1/4 tsp turmeric
  • 1/4 tsp chili powder
  • salt to taste
  • 2 cups vegetable stock
  • 1 lb. chopped fresh spinach, wash and remove stems
DIRECTIONS:
  1. In a large saucepan, heat oil and cumin til aromatic
  2. Stir in ginger, onion, and turnip. Saute til onions soften.
  3. Add chili powder, salt, and turmeric. Saute for about another minute.
  4. Add vegetable stock and bring to a boil. Cover and simmer until turnips are soft.
  5. Add spinach and cook for 5-8 minutes. Remove soup from heat.
  6. Pour soup in blender and puree in batches til complete. Reheat.
  7. Ladle into bowls and serve. Enjoy your palak ka shorba.
