Homemade Irish Beef Stew
Beef Stew Soup Recipe
This homemade Irish beef stew recipe is an easy soup to make. Make it with a stout Irish Beer. Very tasty. Enjoy!
Ingredients:
- 2 TBS olive oil
- 3 TBS flour
- 2 lbs. beef chuck, cut into bite-sized pieces
- 1 lb. peeled and sliced carrots
- 6 lg. peeled and chopped potatoes
- 1 white onion, cut into large chunks
- 2 minced cloves of garlic
- 1 pint homemade beef stock
- 1 (6 oz.) can tomato paste
- 1 1/2 c. stout Irish beer
- 1 TBS cold water
- 1 TBS cornstarch
Directions:
- In a large saucepan, heat oil over medium heat.
- In a separate bowl, toss the beef cubes with the flour to coat, then brown cubes in the hot oil.
- Place the carrots, potatoes, onion and garlic in a large slow cooker. Put the meat on top of the vegetables.
- Combine the beef broth with the tomato paste and pour into the slow cooker along with the beer.

Cover and cook on High for 6 hours or Low for 8 hours. About 30 minutes before serving, dissolve the cornstarch in the cold water and then stir into the broth. Simmer on the High setting for a few minutes to thicken.
