Homemade Irish Soup
Irish Oyster Soup Recipe
This homemade Irish Oyster Soup recipe is plentiful with oysters. It is accented by potatoes, a bouquet of herbs and salt pork. Enjoy. Serves 6-8
Ingredients:
- 2 lg.unpeeled potatoes
- 3 TBS butter
- 4 oz.diced salt pork
- 4 cups milk
- bouquet garni (bundle green herbs and a bay leaf, or fill a tea ball with herbs)
- salt and pepper
- 36 fresh shucked oysters, juice reserved
- Garnish with finely chopped parsley
Directions:

Cook the potatoes whole in salted boiling water just until tender.

While the potatoes are cooking, bring the milk to a boil and remove from heat. Soak the bouquet in the hot milk and allow the flavors to disperse.

Saute the pork in a small skillet with a little butter until tender. Drain grease.

Peel and mash the potatoes then whip in the hot herbed milk.

Add the pieces of salt pork. Season with salt and pepper to taste.

Stir continuously and bring to a boil. Reduce heat, add the oysters with juice, and simmer for a few minutes.

Taste for seasoning and stir in the rest of the butter.

Ladle into bowls and serve. Garnish with chopped parsley and enjoy your Irish oyster soup.
