Homemade Swiss Cabbage Soup
Kabissuppe - Traditional Switzerland Cabbage and Rice Soup
This homemade swiss cabbage and rice soup. It's perfect as a light meal or a substantial first course.
Ingredients:
- 2 TBS butter or margarine
- 1 sm. cabbage, shredded or use a 1 lb. bag of coleslaw mix
- 1 lg. chopped onion
- 6 cups beef or chicken stock
- salt and pepper to taste
- 1/8 tsp nutmeg
- 1/2 cup rice
- Garnish with grated Parmesan cheese
Directions:

In a large saucepan or stockpot, melt the butter or margarine. Add onion and the shredded cabbage or coleslaw mix. Fold mixture to coat.

Cover and cook over low heat. Stir often to prevent burning. Cook until the cabbage is about half cooked and begins to turn golden.

Add the stock and bring to a boil. Season with salt and pepper.

Add nutmeg and stir til seasoning mixed evenly.

Cover, lower heat, and simmer for about 10 minutes. Add the rice and simmer for about 15-20 more minutes.

Ladle into bowls. Sprinkle each bowl with grated parmesan cheese. Serve and Enjoy your kabissuppe!
