Classic Homemade Vietnamese Soup
Lotus Root Pork Soup Recipe (Canh Cu Sen)

This homemade Vietnamese soup recipe combines the savory blend of pork ribs, lotus root, and scallions. Serves 4

Ingredients:

  • 1 1/4 lb. lean pork ribs cut into short lengths
  • 1 lb. fresh lotus root peeled and thinly sliced.
  • 5 cups water
  • 2 tablespoons Vietnamese fish sauce (Nuac Cham)
  • 1/2 tsp salt
  • 3 scallions sliced using both white and green sections

Directions:

  1. Place ribs, lotus root, scallions, salt, and water in a sauce pan. Bring to a boil. Reduce heat, cover, and allow to simmer 1-2 hours until pork well cooked and fluid is reduced to approximately 4 cups.
  2. Add fish sauce to taste
  3. Serve hot with white rice.
