Homemade Portuguese Sausage Soup
Sausage and Cabbage Soup Recipe

This homemade sausage and cabbage soup recipe tastes great. Guaranteed to send you looking for more. Perfect for St Patrick's Day, but great anytime.

Ingredients:

  • 1 pound smoked sausage, sliced
  • 1 medium head cabbage, chopped
  • 6 potatoes, peeled and cubed
  • 1/4 cup vegetable oil
  • 2 cups chopped onion
  • 2 (15 ounce) cans kidney beans
  • 2 cups ketchup
  • 1 (10.5 ounce) can beef consomme
  • 2 2/3 quarts water
  • 2 teaspoons garlic powder
  • 2 teaspoons ground black pepper
  • 1 teaspoon salt
  • 1/2 cup vinegar

Directions:

  1. In a large saucepan, heat oil over medium heat. Cook onion until tender.
  2. Add sausage and cook for about 5 minutes more.
  3. Add the potatoes, cabbage, ketchup, consomme, water, and beans. Season with the salt, pepper, and garlic powder.
  4. Bring to a boil. Then, reduce heat, cover, and simmer for about 30 minutes.
  5. Add the vinegar and simmer for another hour. Stir occasionally. More water may need to be added.
  6. Ladle into bowls and serve this homemade sausage and cabbage soup recipe.
