Lithuanian Cold Beet Soup Recipe ( cold bortsh )

Saltibarsciai is a traditional Lithuanian soup stuffed with a variety of textures. A perfect summer soup. Served cold as a light meal or makes a great duo with a fresh sandwich or baked potatoes. Garnish Lithuanian cold beet soup with dill.
Serves 4-6.

Ingredients:

  • 8 cups cold buttermilk
  • 1 sliced cucumber, sliced into thin strips
  • 3 med. peeled beets, boil then dice or cut into thick strips
  • 2 hardboiled eggs, sliced into strips if possible
  • 1/4 cup chopped scallions
  • 1 TBS fresh chopped dill
  • salt and freshly ground black pepper to taste
  • Garnish with fresh chopped dill

Directions:

  1. In a large bowl, whip buttermilk.
  2. While mixing, add in beets, cucumber, eggs, scallions, and dill.
  3. Season with salt and freshly ground black pepper to taste.
  4. If soup is too rich or thick, add cold water to thin it down.
  5. Serve into bowls, garnish with freshly chopped dill, and Enjoy!

    For a little variety, try changing the textures of the ingredients. You can also substitute sour cream for the buttermilk and use the water the beets were cooked in to thin the soup mixture to the preferred consistancy. You might also try unflavored yogurt instead of the buttermilk, adding a little lemon zest, or a little lemon juice, for an all together different flavor. Either way, this soup makes a delicious, healthy soup!
