Homemade Dark Bread Soup

This schwarzbrotsuppe recipe is quite simple to make. Flavor is accented by onion and caraway. Homemade dark bread soup makes the perfect appetizer for any hearty meal. Enjoy!


Ingredients:

  • 1 lb dark bread, tore into chunks
  • 8 cups water
  • 1/2 tsp caraway seeds
  • salt
  • 1 finely chopped onion
  • 1 TBS fat
  • 2 beef bouillon cubes or cream

Directions:

  1. In a large saucepan, soak dark bread in water. If desired, substitute homemade beef stock for the water and omit the beef bouillon cubes. Bread should begin to separate.
  2. Remove from heat and strain, reserving broth. Bring broth back to a boil.
  3. Season with caraway and salt.
  4. In a small skillet, melt fat and sautee onion til brown. (I like to use a little bacon fat for extra flavor)
  5. Add onion to broth. Flavor with bouillon or cream if desired.
  6. Ladle into bowls and serve.
