Homemade Shrimp Soup

This homemade shrimp and veggie stew recipe makes a tasty one dish meal with a kick! Tastes great! Simple to make and low-fat too! It goes great with french bread or hard rolls. A tasty treat!


Ingredients:

  • 1 lb. peeled, deveined medium shrimp
  • 2 oz. lime juice
  • 4 fresh jalapeno peppers
  • 6 banana peppers
  • 1 med. chopped onion
  • 2 c. chopped okra
  • 2 (14.5 oz.) cans diced tomatoes with juice
  • 1 TBS tomato paste
  • 1 c. sliced yellow squash
  • 1/4 tsp dried thyme

    Directions:


    1. In a large Ziplock bag, toss the shrimp with the lime juice to coat. Set aside.
    2. Remove the seeds from 2 of the jalapeno peppers and 4 of the banana peppers. In a food processor, chop all the jalapeno peppers, all the banana peppers, onion, and okra.
    3. Spray a large, deep skillet with cooking spray. Cook the pepper mixture over medium heat for 5 minutes. Mix in the diced tomatoes, tomato paste, and squash. Bring to a boil. Then cover, reduce heat to low, and simmer 10 minutes, until squash is tender. Season with thyme.
    4. Mix the shrimp into the skillet and return to a boil. Cook until shrimp become opaque.
    5. Ladle into bowls and serve. Enjoy this homemade shrimp soup recipe.
