Shrimp and Veggie Stew Recipe
Homemade Shrimp Soup
This homemade shrimp and veggie stew recipe makes a tasty one dish meal with a kick! Tastes great! Simple to make and low-fat too! It goes great with french bread or hard rolls. A tasty treat!
Ingredients:

1 lb. peeled, deveined medium shrimp

2 oz. lime juice

4 fresh jalapeno peppers

6 banana peppers
-
1 med. chopped onion

2 c. chopped okra
-
2 (14.5 oz.) cans diced tomatoes with juice

1 TBS tomato paste

1 c. sliced yellow squash
-
1/4 tsp dried thyme
Directions:
- In a large Ziplock bag, toss the shrimp with the lime juice to coat. Set aside.
- Remove the seeds from 2 of the jalapeno peppers and 4 of the banana peppers. In a food processor, chop all the jalapeno peppers, all the banana peppers, onion, and okra.
- Spray a large, deep skillet with cooking spray. Cook the pepper mixture over medium heat for 5 minutes. Mix in the diced tomatoes, tomato paste, and squash. Bring to a boil. Then cover, reduce heat to low, and simmer 10 minutes, until squash is tender. Season with thyme.
- Mix the shrimp into the skillet and return to a boil. Cook until shrimp become opaque.
- Ladle into bowls and serve. Enjoy this homemade shrimp soup recipe.
