Homemade Vietnamese Soup
Chicken and Watermelon Soup Recipe

Watermelon rind can be used in a variety of dishes. A summer favorite was watermelon rind pickles growing up. This homemade chicken and watermelon soup recipe is a unique vietnamese dish that combines the taste of chicken with watermelon in a delightful soup!

Ingredients:

  • 1 1/2 - 2 cups peeled watermelon rind cubed in 1 inch cubes
  • 1 1/2 cups cubed chicken
  • 6 cups water
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper

Directions:

  1. Place watermelon, water, and cuped chicken into a 1 gal stock pot.
  2. Bring mixture to a boil and boil for 20 minutes.
  3. Add salt and pepper for flavor.
  4. Reduce heat and simmer for one hour to tenderize.
  5. Serve hot with white rice. Serves 4-6
